Named “Harimau,” meaning tiger in Indonesian, this coffee represents the strength, character, and wild beauty of its origin.\u003cbr\u003eGrown on fertile volcanic slopes surrounded by ancient forests, Harimau is cultivated by smallholder farmers whose family farms average just one hectare. Across northern Sumatra, coffee is deeply connected to local communities, with women playing an essential role in sustaining the region’s coffee heritage and production.\u003cbr\u003eThe unique character of Harimau comes from Sumatra’s legendary Wet-Hulled process (Giling Basah), a method born as answer to the island’s humid tropical climate and the necessity of the farmers to sell their product faster.\u003c\/p\u003e\n\u003cp\u003eCoffee farmers typically harvest coffee cherries and remove the red outer skin and part of the mucilage (the fruit flesh) by hand at their farms or homes, exposing the coffee beans inside. The beans are then dried for a short period before being brought to a coffee marketplace, a collector, or a collection point, where they are purchased with moisture levels typically ranging from 30–50% and with some mucilage still partially intact.\u003c\/p\u003e\n\u003cp\u003eThe coffee is then combined and hulled, meaning the final protective layer known as parchment is removed, while the beans are still in this high-moisture state. This practice allows the coffee to dry much more quickly on patios or tarps, even under Sumatra’s rainy and cloudy conditions.\u003cbr\u003eThis traditional process creates the unmistakable profile that has made Sumatran coffee famous around the world.
