This lot of Rum Aged Natural was produced by Sebastian Gomez on his farm Finca La Divisa, located in San Adolfo, Huila. Composed entirely of the rare Pink Bourbon variety, the ripe cherries were fermented anaerobically for 24 hours, then partially dried, and allowed to ferment for an additional 50 hours. After being fully dried on raised beds, the parchment is allowed to rest in rum barrels for 20 days. This extended fermentation time and natural processing create intensely fruity flavors of pineapple, strawberry, and blood orange. Combined with the rum aromatics of barrel aging, this lot reminds us of tiki drinks as much as it does coffee.
