Los Alpes has been in Wilfredo Trujillo's family for generations. He inherited the estate from his father and decided to refocus production toward specialty coffee. To improve production, Wilfredo attended several training seminars from InConexus. This partnership encouraged him to start experimenting with new varieties and post-harvest practices, including Pink Bourbon and honey processing.
Composed of the elusive Pink Bourbon variety - a hybridization of red and yellow Bourbon - this lot underwent a honey process. To achieve a honey process, the coffee cherries are depulped. Instead of being washed, the sticky mucilage is left on the coffee seed and moved to raised beds to dry. This process impresses fruity qualities and a softer mouthfeel into the coffee. This lot features apple blossom and spiced cider aromatics balanced with stone fruit (apricot and peach) flavors.
