The aroma opens with dried fruit, spices and caramelized sugars, and as water is poured, subtle notes of spiced spirits fill the experience. On the first sip, spiced rum carries through the cup into dried strawberry and dried fig sweetness. A silky body and crisp acidity lead to a lasting finish of creamy malted chocolate and warm baking spices.

This coffee is produced by 200 smallholder farmers of various sizes in the mountains of Eastern Haraz, a large natural preserve and agricultural area in Yemen’s Sana’a Governorate. In this part of Yemen, coffee is a legacy: farmers tend terraced parcels passed down through generations, and coffee has been in the ground in Haraz for about six hundred years.

Most Yemeni coffee is dried on rooftops. This micro-lot was processed differently. Cherries otherwise destined for families’ rooftops or raised screens were delivered to a central processing site and packed into sealed tanks for a controlled anaerobic fermentation of 48 to 72 hours. They were then dried on raised beds for 15 to 20 days and stored in climate-controlled facilities. The result is a micro-lot that offers a glimpse into both the history of Yemeni coffee and its future.
