Hacienda La Esmeralda is the epicenter of the rediscovery of the Geisha variety and the subsequent fascination the Specialty Coffee industry has had with the variety. In 2004, the Peterson family decided to separate lots based on their location on the farm, and kept them separated throughout processing. By doing so, the Peterson's were able to isolate the cup profile of the Geisha variety, experiencing the juicy acidity and multi-layered aromatics that Geisha has to offer. While common practice today, this decision to separate lots was progressive and experimental at the time.

It's this experimental spirit that led the Petersons to start trialing Scott Lab's Lalcafe yeasts during the fermentation period of processing. One particular strand of yeast, Intenso, is known for its ability to enhance mouthfeel, floral aromas, and tropical fruit notes. After depulping the coffee cherries, the seeds are added to a fermentation vessel where they're inoculated with Intenso yeast and allowed to ferment for 45 hours, after which they are rinsed and moved to patios to dry for 5 days.

In the cup we find floral aromas of jasmine and violet. Citric and malic flavors of lemon, ripe pear, and blueberry are encapsulated in sugar browning flavors, reminding us of lemon and blueberry pie. As the cup cools, the juicy acidity and soft, silky body interplay with a note of cantaloupe. Aromatics herbs like thyme and sage are found in the aftertaste.
