This is our third year working with Alejo Castro of Volcan Azul in West Valley, Costa Rica. With 200 years of coffee growing heritage in the Castro family, Alejo’s production and processing at Volcan Azul is masterful in execution.
For this Geisha lot, coffee cherries were collected at peak ripeness before being floated and washed to remove any imperfect fruit. The cherries were then placed in stainless steel tanks to ferment anaerobically over the course of 5 days. Temperature, pH, and Brix (sugar content) of the cherries are monitored to determine when to halt the fermentation. Once halted, the cherries are moved to raised beds, allowed to dry for 10 days, and then placed in a mechanical dryer for 8 hours.
Alejo's meticulous approach results in a cup with aromas of orange blossom, rose, dark cherry, and berries. In the cup, fresh fruit flavors of strawberry and blackberry balance boozy notes of maraschino cherry and orange liquor. A syrupy mouthfeel is lifted by a vibrant, wine-like acidity that carries through a dark caramel and vanilla aftertaste
